Pepper variety Red elephant
Like any summer resident, I have several varieties proven over the years, which I must plant every summer. One of the favorites is the Red Elephant pepper.
This early maturing hybrid is considered suitable for outdoor use, but I love growing it in a greenhouse. In favorable greenhouse conditions, it pleases with a very generous and early harvest. Ripens about 100 days after germination. On a bush with a height of about 90 cm, about a dozen elongated fruits weighing up to 200 g ripen at the same time. Fruits of a peculiar conical shape, really resembling a trunk.
Unlike many varieties, the Red Elephant willingly blushes in the bud. Ripening, the fruits first acquire a brown, then a rich dark red color. True, I prefer not to overexpose them on the bush, but to shoot at the stage of technical ripeness, when the peppers become glossy, and the wall thickness reaches 3-4 mm. Then the next turn of the harvest is not long in coming. Thus, it bears fruit actively throughout the season.
This pepper tastes excellent: sweet, juicy, quite aromatic and fleshy. Fresh green and fully ripe red fruits are tasty. Good in canning, I prefer to use it for making lecho and paprikash.
